No question: Corn or sweet corn is one of the most delicious delicacies that many gardeners have to offer in their own garden. However, in order to enjoy the corn with all your senses, it is of course essential to find the right time to harvest. But how can you tell that corn is ripe? When is the optimal harvest time? We tell you!

In any case, it is important to be a little sensitive to the perfect time. If you miss it, you risk that the grains become too hard.

Signs of ripe corn

❖ Milky discharge

Sweet corn is harvested when it has reached the so-called "milk maturity". This is characterized by the fact that the grains are not fully ripened. And how do you recognize this state? Quite simply: You carve a grain of corn very carefully with your fingernail (or a pair of sharp scissors). As soon as a milky liquid emerges from the corn kernel in question, the milk is ready and the maize can be harvested. If this time is missed, the grains will ultimately become inedible and hard.

❖ Dried flowers

It is also important to note the flowers on the corncob. If they wilt or dry up, this is also a sign that the maize can now be harvested. As a rule of thumb, it is important to pay attention to the appropriate signs in the period between July and September in order not to miss the ideal time of harvest.

" Tip: Just because a few corn cobs have reached milk maturity does not mean that all of your corn cobs can be harvested. It often makes sense to let some flasks hang a little longer and observe them, as milk maturation may not have occurred here yet.

Important information about storage after the harvest

In order to enjoy the delicious and genuine taste of sweet corn with all its facets, it makes sense not to store it for too long. If you can look forward to a particularly rich harvest, you can also store excess corn in the refrigerator (vegetable compartment) for a few days.

Sweet corn will last even longer if you blanch it a little in hot water and then store it in the freezer. Simply place the flask in a commercially available freezer bag.

Difference between fresh and stored corn

Anyone who has eaten sweet corn from their own garden - almost freshly harvested - knows how good it tastes. However, if a lot of corn has been harvested, it is often not possible to enjoy all of the flasks in a very short time. Of course, corn that was either stored in the freezer or in the refrigerator is still edible. The small differences in taste can be explained by the fact that the sugar contained in the corn kernels changes into starch over time. That means: due to the lower sugar content, sweet corn tastes less sweet and, accordingly, less tasty for many people.
